Ingredients
- 2 cups yellow cornmeal
- 3/4 cup all-purpose flour
- 4 tsp baking powder
- 1 tbsp salt
- 1 egg
- 1.5 cups whole milk (amount may vary)
- 1 jalapeno (diced), optional
This cornbread is very basic, not sweet, and can be a little dry. Great for having with something like chili, but definitely needs butter or something to have on its own.
Steps
Preheat your oven to 425°F.
In a large bowl, whisk together the cornmeal, flour, baking powder, and salt.
Add the egg to the dry ingredients and begin mixing
Mix in milk until it's about the consistency of cake batter. Add diced jalapeno if you want.
Grease a cast iron skillet with butter and pour in your batter.
Bake for about 25 minutes until the top is golden.
Let cool in the pan for 5 minutes before slicing into wedges.
Notes
- You might be able to add a few tsp of honey or something to sweeten it, but I haven't tried.
- Jalapeno makes this so much better, add it if you can.
